Abstract

The watermelon flavor in powder with 14% arabic gum, 18% maltodextrin and 12% compounds volatile fraction presented a shelf-life of sixth months. The flavor was stored at room temperature (27.4 ± 5.4°C) and packed in low-density polyethylene without change in the perceived flavor intensity. No significant changes in relative density and surface flavor were found, while humidity content was less than 10%.
