Abstract

The objective of this work was measure the antioxidant capacity of corn starch film contained red Cuban propolis extract by the FRAP method and its effectiveness like active packaging starting from the determination of the grade of inhibition of the oxidation lipídica in a model system covered with the film. The antioxidant capacity obtained was 319.9 µM/100 g expressed as ion ferric oxidation and 21% of lipid oxidation inhibition.
