Quality of beef and chicken sausages commercialized in colombia

The physic-chemical and microbiological indicators of beef and chicken sausages commercialized in Colombia were evaluated. The products showed similar characteristics, with differences due to principally their formulation and in all cases fulfilled the sanitary regulations.
