Abstract

The hygroscopic of a cuban variety of integral rice was determined by means of the adsorption isotherm at 30ºC. The adsorption data experimentally obtained were fitted to model proposed by G.A.B. It showed a good fit to the adsorption isotherm experimental data. The initial humidity content was 13,22% and the monolayer humidity content was 6,12%. Water activity was 0,62 and 0,19, respectively.
