Validation of Gerber's butirometryc method for fat determination in fruit yogurt

The objective of this paper was to verify the application of a modified Gerber's butyrometric method, in fruit yogurt from whole buffalo milk in parallel with the gravimetric method taken as reference. Linear regression equation obtained for comparing results of both methods used probed that equivalent Gerber's method can be used for fat content determination.
