Determination of floral origin of honey based on the analysis of volatile compounds

The floral origin of honey is a very important characteristic of its quality. It is usually determined by pollen analysis, physical-chemical parameters and sensory properties. The analysis of volatile compounds could be an alternative for characterizing honey. This review resumes some techniques that have also been used for the analysis of honey volatile components and the main information about their application.
