Films and coatings of chitosan in the preservation of fish

The use of films and coatings of chitosan in fish contributes with the improvement of their quality, retards its oxidation and increases its shelf life. In this sense, some aspects about fish spoilage and applications of this biopolymer as an alternative method for its preservation are discussed.
