Abstract

A solid-phase microextracción method for the determination of beer volatile compounds in combination with gas chromatography-mass spectrometry was developed. Three commercial fibers commonly used for evaluated beer: PDMS, PDMS/DVB and CAR/PDMS, four sodium chloride concentrations (0; 12.5; 25 and 37.5% m/v), three pre-extraction times, (5, 10 and 15 min) were evaluated. The optimization of the extraction time and extraction temperature was done by response surface design. The optimized parameters were fiber of CAR-PDMS (85 µm), addition of 2 g of sodium chloride to 8 mL sample, 10 min pre-extraction, extraction to 35ºC for 30 min and 2 min desoption.
