Abstract

The aim of the present work was to determine the shelf life of sweet cookies “Salvita”. Physic–chemical and sensory analysis at the beginning, were determined in accordance to national quality standards. Sensory analysis was also performed at the equilibrium. The moisture adsorption isotherm was made according to the Landrock and Proctor method. The water vapour permeability package was determined. Results for Guggenheim, Anderson and Boer model fitted was highly significant. Sweet cookies were sensory accepted up to 53.3% of the equilibrium relative humidity. The shelf life was determined by a mathematical model.  The shelf life of sweet cookies packed in bi oriented polypropylene of 47m, in storage conditions of 30oC and 85% HR was 65 days.
