Abstract

The study of the yields is an essential task because it offers a lot of information related with the behavior of the raw material and it allows adjusting the planning from the production to realer levels of obtaining. For that reason, at the present work 255 heads of different categories were used with the objective of determining the yields and drip loss in the sacrifice and debone in industrial slaughterhouses. The drip losses for transportation were between 0.3 and 8.0%. The drip losses in pre-slaughter care were between 2.2 and 3.7%. The yields of hot carcass relating to the alive weight were between 46.7 and 51.9%. The drip losses in refrigeration were between 2.6 and 3.4%. The meat yields with reference to the alive weight between 22.01 and 32.20%. The bone percentages with relationship to the purchase alive weight were in the range of 14.20 and 16.47%. The percentages of fat with relationship to the purchase alive weight were in the range of 0.60 and 3.24%.
