Abstract

The aim of this work was to determine the shelf life of cookies Riki. Physic - chemical and sensory analysis at the beginning, were determined in accordance to national quality standards, and in the time until the product fault. It was determined the thickness and the water vapour permeability to the packaging material as well as the resistance to the thermal sealing of the bags. The shelf life of cookies "Riki" packed in metalized polypropylene in packages of 140 g was 226 days.
