Abstract

The objective of this work was to diagnose the current scenario of the sensory evaluation in the Cuban industry of foods, for which 366 factories of the Managerial Group of the Alimentary Industry were interviewed. It concludes that it is not exploiting all the probabilities of this science, the methodologies for its use need to be revised, those that direct the activity are not qualified, that which rebounds in the formation and monitoreo of the sensory commissions, a deficit of material, informative resources exists, as well as of interest that commits the objectivity of this evaluation.
