Evaluation the coconut coal as a filtering media in the Cuban rum industry

The composition of distilled alcoholic beverages is very complex, there are compounds that most contribute unpleasant odors, so they must be destuffed with charcoal. The present work was carried out with the general objective evaluate national coconut charcoal as a filter medium in the Cuban rum industry. Coconut charcoal samples were taken to reduce alkalinity, filters were built that were used to evaluate their capacity to unstove or bleach alcohols and spirits. Commercial charcoal Rak-0.8 was taken as a standard of comparison. The charcoals studied were tasted in traditional filters taking samples before and after filtering with colorless and aged raw materials. As main results it was obtained that in the drinking processes of the materials there were no significant differences from the physical, chemical and sensory ones between the filtrates obtained with the national charcoal and those of commercial charcoal Rak-0.8.
