Abstract

Flavored waters are a healthy offering of products created by humans that help maintain body hydration and thereby improve human health. The aim of this work is to define the sweetener content (saccharin and cyclamate) and doses of pineapple and strawberry flavoring in the flavored water. The best variants of pineapple and strawberry flavored waters were achieved with 0,08 g/L of a sweetener mixture (sodium cyclamate/sodium saccharin) and with 12 g/L of pineapple essence No. 8 and 6 g /L of strawberry essence No. 3. Sensory evaluation revealed an odor and taste of light intensity, while the sweetness was very light in intensity. These presented turmeric extract, with 0,94 mg of polyphenols per liter of water. Microbiological analyzes did not show microbial contamination by total coliforms and heat-resistant coliforms.
