Abstract

For the importance the production of chocolate, it was carried out an analysis of how the scientific production has behaved from 1945 to 2011, and an analysis of patents from the 2003 to 2013. The aim was to quantify the literature recovered in databases during the analyzed period, as well as the analysis of author's variables, year, scientific publications and countries. In the case of the technological analysis of the patents the variables year, publications and institutions were evaluated. As a result it was determined that 2008 was the year of most scientific production and USA was the country which mostpublications have on the matter. The journal of more visibility in the topic was the Journal of Agriculture and Food Chemistry being the cacao chemistry the thematic more discussed. In the case of the patents it coincides with the analysis of the institutions being the Nestlé Corporation in the first place.
