Abstract

The antimicrobial activity of avocado (Persea americana Mill. var. Hass) seeds powder was assessed by the minimum inhibitory concentration method for microbial strains selected for their relationship with the spoilage of meat products. Avocado seeds powder inhibited the growth of microbial strains tested, with positive results at the lowest additive concentration (48.8 mg/L), demonstrating its potential as antimicrobial for use in the formulation of food to ensure safety and increase their shelf life. However, it is necessary to verify its influence on changes in the sensory attributes and antimicrobial efficacy in various products.
