Abstract

Unifloral honeys of tsitsilché (Gymnopodium floribundum Rolfe), Tahonal (Viguiera dentata Blake, var. heliantoides) and haabín (Piscidia piscipula L.) produced in Yucatan, Mexico were studied. Some physical and chemical parameters were evaluated by following the standardized analytical methods in Mexico and Europe. The results were consistent with those established by the Mexican and European standard for quality of honey. Nevertheless, the analysis of variance of the results was insufficient to discriminate between the floral origins of the studied honeys.
