Abstract

The mate flavoring is applied in the industry for the production of soft drinks. So, developing a matte flavor for the production of syrups for soft drinks would be a novel product with wide acceptance. That is why the present work aimed to develop a mate flavoring. The mate flavoring presented 13 components for a concentration of 12.37% m/m. The esters were the chemical group with the highest qualitative and quantitative percentage in the flavoring. The compounds with the greatest sensory contribution were three esters and an aldehyde that generally present herbaceous notes reminiscent of natural mate. The dose of flavoring applied in soft drinks was 0.5%, where a mean score of 4.1 was obtained, which corresponds to a good flavor quality.
