Color intensity and chromatic characteristic of oak wood extract from barrels used in the ageing of rum

Abstract

Oak wood extracts from lot of barrels with different origins were analyzed for color intensity at 430, 440 and 525 nm, chromatic coordinates Yxy, L*a*b* and L*C*H°, solids and total polyphenols. Results showed that color intensity was lesser with the increase of wavelength; there were a statistical difference between lots for x, y, a*, b*, C*, ΔC*, ΔEa*b*, solids and total polyphenols. Coordinates a* always were negative and b* positive and higher. Significant correlations were found between all variables except solids and total polyphenols with color intensity at 525 nm; total polyphenols with all chromatic characteristics, and solids with Y, x, L* and H°. Variability of color parameters it was not related to barrel origin and total polyphenols were not decisive in color.
