Development and evaluation of an isotonic drink

Abstract

The aim of this research was to develop an isotonic drink ensuring any adequate inclusion of carbohydrates. Mineral, carbohydrates and chemical characteristics (pH, conductivity, acidity and osmolarity) were evaluated and the developed product was sensorially evaluated by a seven points hedonic scale. The concentration of Na+ and K+ in the developed drink was of 21.10 and 6.05 meq/L, respectively. The carbohydrate value was of 6.9 g/100 mL. The pH value was remained between 3.1–3.4 and titrated acidity 0.23–0.30%. The osmolarity was 302 mOsm/L, similar value to that of the plasma osmolarity (290 mOsm/L), which indicates that the developed drink can hydrate quickly and effectively to persons of high performance (yield).
