Abstract

The adsorption isotherm of a sample milled curcuma with microbiological good quality and a humidity content of 8.9% dry basis was determined. The adsorption data experimentally obtained was fitted to model proposed by Guggenheim, Anderson and Boer. The monolayer humidity calculated throw this model was 1.04%. The milled turmeric evaluated sensory and microbiological at the equilibrium was accepted until a relative equilibrium humidity of 75.10% and the humidity content was 13.48% dry basis.
