Development of antimicrobial plastic films with silver ions for active packaging of sausages.

The antimicrobial activity of the Ag+ ions was assessed by the minimum inhibitory concentration method for microbial strains selected for their relationship with the spoilage of meat products, while the films active with Ag+ ions by agar diffusion and liquid medium methods. Moreover, were characterized by differential scanning calorimetry and mechanical thermodynamic analysis. The incorporation of silver in a concentration of 3 % did not alter the structure and thermal properties of the plastics products. Ag+ ions inhibited the growth of various microbial strains, resulting in the S. typhimurium ATCC 14028 which present greater resistance, demonstrating the potential antimicrobial silver. Although antimicrobial silver films showed no inhibitory effects should be taken into account their potential as food packaging to increase food security and life.
