Damage mechanism of lacquered cans in contact with tomato pure

Tinplate is a heterogeneous material and organic layers have been used for protecting the surface and to prevent the lid and ferrous migration to the foods. Ions migration through lacquers is governed by the electrochemical characteristics of the layer. In this report, deteriorate mechanisms of cans with two epoxiphenolic thickness layers and their interaction with tomato pure at 12 % soluble solids was studied. Electrochemical impedance spectroscopy analyses were employed, simulation of the results to a equivalent circuit and parameters which describe both systems were calculated. It was concluded that the two systems present a resistive-capacitive behaviour due to the appearance of damage in the layer during interaction with the product and that the effectiveness of the lacquered process and lacquered layer thickness are essential in the lacquered application.
